黄桂凤、马玉蓉主编的《旅游服务英语》是根据教育部《高职高专教育英语课程教学基本要求》的精神，为适应海南国际旅游岛建设需要，以满足学生职业生涯和社会经济发展需要为目的，遵循以就业为导向，以职业能力为本位，以岗位要求和职业标准为依据的原则，将行业知识和职业技能渗透到英语教学中来，满足新形势下新一轮高职高专英语教材改革的实际需要而编写的一部教材。
《旅游服务英语》采用项目→模块→任务的方式对教材进行编排和整合，按照完整的导游接待工作流程分为13个项目共13个章节（Chapter），其中前12个项目内容涵盖：接团前的＃←备→接机→入住酒店_商议行程→用餐→途中讲解→旅游观光→购物→娱乐→返回酒店→结账离店→送团等，体现了旅游行业的“吃、住、行、游、购、娱”六大元素；最后1个项目为模拟带团的整体性操练。前12个项目中每个项目由教学目标（Objectives）和
5个模块（Module）构成，这5个模块包括热身、对话、听力、实操和短文阅读：每个模块设计2到3个任务共10个任务（Task）。
